Harvest Moon Baking Company (HMBC) was born in 2006 in Denver, Colorado. What started as a homegrown bakery has stayed true to old-school baking traditions ever since. We use pure, simple ingredients with no artificial preservatives, focusing on quality, consistency, and craft in everything we make.

Summary

The Bun Team Member is responsible for ensuring HMBC standards are met to produce the highest quality finished product and help to create an exceptional employee experience. The Bun Team Member is responsible for using their understanding of ingredients and food preparation to follow recipes, create consistent baked bread, and demonstrate excellent problem-solving skills. The Bun Team Member should always follow food, health, and safety regulations. Previous baking experience in a high-volume, fast-paced environment is preferred.

Responsibilities

  • Ensure quality control throughout the production process.
  • Ensure all Koenig machines are properly assembled for production.
  • Notify Production Manager if/when programs need adjustment for Koenig machines.
  • Ensure all product weights meet the standard.
  • Ensure the quality of the dough ball is to standard.
  • Communicate with Mix to ensure mixes are delivered at the appropriate time.
  • Ensure proofers are loaded properly with bun carts.
  • Ensure the station is consistently stocked with oven carts and bun trays.
  • Responsible for all product changeovers and program adjustments on Koenig machines.
  • Ensure all mixes are counted to verify the production schedule is complete.
  • Record all the bun team waste.
  • Follow the posted production schedule and complete the scheduled production needs in the allotted time.
  • Ensure the area is kept clean and organized during production.
  • Adhere to GMPs and SQF programs.
  • Notify Bun Team Supervisor and Production Manager of any production, equipment, staffing, and/or work-in-progress issues.
  • Ensure that the table has all required racks and pans throughout each shift.
  • Adhere to the company’s attendance policy.
  • Adhere to the company’s workplace safety standards.

Working Conditions

  • May occasionally need to work overtime and on Saturdays to fulfill orders.
  • Hours will vary depending on the business and staffing needs
  • Be able to work on your feet for long periods of time (up to 8 hours)
  • Position requires prolonged standing, bending, stooping, twisting, and lifting products and supplies weighing up to 50 lbs., as well as repetitive hand and wrist motion
  • Work with hot, cold, and hazardous equipment
