The Prep Cook plays an essential role in supporting the kitchen team by preparing ingredients and maintaining a clean, organized work environment. Responsibilities include washing, chopping, and portioning ingredients, following food safety and sanitation guidelines, and assisting with basic cooking tasks. The Prep Cook ensures that all ingredients are prepared and ready for use during service, contributing to the efficiency and smooth operation of the kitchen.

SHIFT

AM: Start time between 5 AM - 7 AM, end time between 1 PM - 3 PM. 

PM: Start time between 12 PM - 2 PM, end time between 8 PM and closing (which is typically between 10 pm to midnight).

PRIMARY RESPONSIBILITIES

  • Prepare ingredients for cooking, including washing, peeling, chopping, and slicing.
  • Measure and assemble ingredients for menu items following recipes and specifications.
  • Portion and package prepared ingredients for use during service.
  • Maintain a clean and organized work area, including kitchen equipment and utensils.
  • Follow food safety and sanitation guidelines to ensure a safe and hygienic kitchen environment.
  • Assist in setting up and stocking stations with necessary supplies and ingredients.
  • Label and store all ingredients properly, ensuring freshness and minimizing waste.
  • Operate kitchen equipment such as slicers, mixers, and blenders safely and efficiently.
  • Assist cooks and chefs with various tasks as needed, including basic cooking and dish assembly.
  • Monitor inventory levels and communicate shortages to kitchen management.
  • Assist in receiving and storing deliveries, ensuring proper storage procedures are followed.
  • Participate in the cleaning and maintenance of kitchen equipment and utensils.
  • Adhere to all health and safety regulations, including proper use of personal protective equipment.
  • Maintain a positive and professional attitude while working in a fast-paced environment.

EDUCATION AND EXPERIENCE:

  • High school diploma or equivalent preferred but not required.
  • 1+ years’ experience as a cook/prep cook in a full-service restaurant
  • ServSafe Certified a plus

WORKING ENVIRONMENT

Airport: This position operates in a climate-controlled international airport environment. The temperature, volume of noise, and exposure to the public is outside the control of First Meridian Services, Inc. The position requires use of public spaces as provided by the airport.

Restaurant: This position may require frequent exposure to a restaurant or retail operation environment. Regular exposure to varying temperatures (hot/cold/freezing), fumes, vapors, industrial restaurant equipment, noise, and guests will be a common occurrence.

The nature of restaurant work requires the Prep Cook to possess certain physical abilities. Those listed here are representative of those that must be met by the employee to successfully perform this job. Most of the workday is spent standing or walking and working in close proximity to others. Eye-hand coordination, depth perception, finger dexterity, and functional vision and speech perception are required. Some bending, crouching, pushing/pulling and lifting/lowering of 20-50 lbs. Some repetitive motions with hands, wrists, or arms. Must be able to operate all equipment used in the restaurant. Some exposure to skin irritants, electrical equipment, and sharp instruments. Risk to these exposures is minimized by strict adherence to company standards, policies and procedures.
