Still Austin is the first true grain-to-glass distillery to open in Austin since the end of Prohibition. We are one of the fastest-growing craft whiskey brands in the United States. This growth includes building a new campus that spans over six acres in South Austin. We are creating a new distillery, bottling facility, aging warehouse, and a hospitality division offering several experiences. About the Role


The Distiller plays a hands-on role in producing our award-winning Texas whiskey. Working as part of a small, collaborative team, this position supports all aspects of the distilling process — from grain handling to barreling — to ensure quality, safety, and consistency across each batch. The ideal candidate takes pride in craftsmanship, thrives in a fast-paced production environment, and upholds Still Austin’s high standards for quality and integrity.


Default shift: 9:00pm-5:00am
Rotating coverage includes Weekdays & Weekend Shifts


What You'll Do


To be successful in this role, the Distiller will:

·       Demonstrate pride and ownership in producing high-quality whiskey, from grain to glass.

·       Maintain consistency and attention to detail in every step of the distillation process.

·       Collaborate effectively across shifts to ensure smooth operations and clear communication.

·       Take initiative in problem-solving, equipment care, and process improvement.

·       Uphold safety standards and maintain a clean, organized work environment.

·       Embody Still Austin’s values of craftsmanship, accountability, and teamwork.


JOB RESPONSIBILITIES

·       Operate and maintain distilling, mashing, and fermentation systems to meet production goals.

·       Record and track daily production data accurately and consistently.

·       Support equipment maintenance and cleaning to sustain quality and operational efficiency.

·       Follow all standard operating procedures (SOPs) to ensure safety and compliance.

·       Inspect and monitor process controls, alerting leadership to issues promptly.

·       Assist in the handling and movement of barrels, ingredients, and finished product.

·       Participate in continuous improvement efforts and cross-training as needed.

·       Operate and maintain grain handling systems including silos, augers, and mills.

·       Manage mash cooking, fermentation, distillation, and barrel-filling processes.

·       Perform daily sanitation and cleaning to maintain equipment integrity.

·       Complete accurate logs for mashing, distillation, sampling, and barreling.

·       Safely operate forklifts, scissor lifts, and other heavy equipment.

·       Support warehouse operations, including loading, unloading, and materials movement.

·       Monitor environmental conditions and ensure compliance with safety standards.


Qualifications


Required:

·       High School Diploma or GED equivalent.

·       Basic computer literacy (data entry and log management).

·       Strong attention to detail and safety orientation.

·       Clear communication skills and team-first attitude.

·       Ability to work independently and take initiative.

·       Flexibility to work across all shifts as needed.

Preferred:

·       2-3 years of experience in distilling, brewing, or related production environment.

·       Mechanical aptitude or experience in equipment maintenance.

·       Forklift certification or equivalent training.
