Summary: The Bread Production Manager oversees bread baking operations during their shift, working side by side with staff, in support of Grand Central Bakery’s mission to serve our customers delicious, authentic food made from high quality local and sustainable ingredients. The Bread Production Manager is directly responsible for bakery operations during their shift including staffing, training, quality control, baker job performance, communication, inventory management, facilities requests, and maintaining employee morale within the parameters of Grand Central’s mission and financial goals. Developing and mentoring skilled, passionate bakers who understand and uphold Grand Central Bakery’s quality specifications is a core responsibility. We’re looking for an enthusiastic and hands-on Manager who loves baking, working with, developing, and managing people, and has a desire to continuously improve our bread production process at GCB.
Compensation: $31.46/hour (non-exempt, overtime eligible).
Supervision: This position reports directly to the Assistant Bread Operations manager.
Schedule: As a full-time hourly employee, the Bread Production Manager works 5 days a week and may be required to work extra hours and/or days on an irregular basis due to unforeseen circumstances and emergencies. Integral to their team, the Bread Production Manager balances limited administrative duties with time scheduled on the floor as a high functioning crew member.
Remote work: This position works on-site and is not eligible for remote work.
Essential job responsibilities:
- Ensures the production of high quality, delicious bread while meeting food safety, quality, and efficiency expectations. Is able to work and train on all bread production tasks. Collaborates with other shifts and departments to coordinate customer-orientated solutions.
- Enthusiastic about developing, teaching, and training new bakers.
- Collaborates with department leadership to support and lead their team through system changes, specials, and new products. Cleary communicates changes to employees in a positive, supportive manner.
- Ensure compliance with all food safety, FSMA, HACCP, and employee safety requirements.
- Ensures that all equipment and maintenance repair requests are handled promptly.
- Responsible for ordering and ensuring all non-GMO standards and specifications are met while supporting leadership in maintaining vendor relationships.
- Completes ordering, inventory, and cost changes in appropriate systems accurately, efficiently, and on time. Works with department leadership to manage Pars and food costs.
- Collaborates with department leadership on schedule to meet labor and thruput goals. Actively engages in discussion with the crew about goals and progress toward goals.

Knowledge, skills, and abilities
- 4 or more years of production bread baking experience required.
- 2 or more years’ experience in management or leadership required.
- Must be at least 18 years old
- Proficient in English or Spanish, both written and oral, required. English/Spanish bilingual, preferred.
- Maintains a valid Food Handler's Card and follows health department regulations.
- Knowledge of all health department regulations concerning food production and handling required.
- Must be able to add, subtract, and multiply with ease and accuracy.
- Intermediate computer skills including the use of Microsoft Outlook, Excel, Word, or comparable programs required.
- HACCP experience, preferred.
