SUMMARY

The HMBC Bake Team Member is responsible for producing high quality baked bread in a fast paced, high volume production environment.  This role will oversee critical stages of the baking process, including dough scoring, proofing management, oven operation, and product quality monitoring.  The Bake Team Member ensures products meet company standards for appearance, texture, consistency, food safety and production efficiency while maintaining a clean, safe and organized work area.  Success in this role depends on attention to detail, efficiency, and the ability to perform in a high volume, fast paced environment.

SHIFTS

  • 10am - 6:30pm, Monday through Friday
  • 1:30pm - 10pm, Monday through Friday

PRIMARY RESPONSIBILITIES

  • Ensure products are moved from the proofers to the ovens in a timely manner
  • Monitor the ovens to ensure proper temperature and bake times are used for each product
  • Inspect products for quality and accuracy before and after baking
  • Remove finished products from the ovens in a timely manner, and bring to the packaging area
  • Score dough accurately and consistently according to product specifications
  • Monitor production schedules and maintain targets throughout
  • Monitor proofers to ensure proper temperature, humidity and proofing times
  • Complete production records and process documentation accurately and timely
  • Demonstrate safe use of ovens, proofers and oven racks
  • Other role-related duties as may be assigned
  • Rotate to other areas of production if needed
  • Proper use of PPE’s throughout each shift
  • Comply with all GMP and SQF programs
  • Adhere to workplace safety standards
  • Adhere to the company’s attendance policy

EDUCATION AND EXPERIENCE

  • High school diploma or equivalent
  • Previous experience in food production or manufacturing preferred but not required.

WORKING ENVIRONMENT

Production: This position requires constant exposure to a production environment. Regular exposure to varying temperatures (hot/cold/freezing), fumes, vapors, industrial production equipment, and noise will be a common occurrence. May occasionally need to work overtime and Saturday to fulfill orders.  Hours will vary depending on business and staffing needs.

The nature of production work requires the Team Member to possess certain physical abilities. Those listed here are representative of those that must be met by the employee to successfully perform this job. Most of the workday is spent standing or walking and working in close proximity to others. Eye-hand coordination, depth perception, finger dexterity, and functional vision and speech perception are required. Frequent bending, crouching, pushing/pulling and lifting/lowering of 20-100 lbs. Regular repetitive motions with hands, wrists, or arms. Must be able to operate all equipment used in the facility. Some exposure to skin irritants, electrical equipment, and sharp instruments. Risk to these exposures is minimized by strict adherence to company standards, policies and procedures.
