Executive Chef - Maleza Costa Mesa

Maleza is a Mexico City–inspired kitchen and mezcal bar where bold flavors, vibrant hospitality, and thoughtful execution come together. Our menu reflects the energy and evolution of Mexico City cuisine — blending traditional roots with contemporary techniques and presentation.

We are seeking an Executive Chef who brings creativity, operational discipline, and strong leadership to the kitchen. This role is responsible for leading daily culinary operations while partnering closely with the General Manager and Corporate Culinary Director to deliver an exceptional guest experience and a high-performing restaurant operation.

The Executive Chef is both a culinary leader and operational partner, responsible for maintaining food quality, managing kitchen systems, developing the culinary team, and ensuring the kitchen operates efficiently and profitably.


What You’ll Do

  • Lead and develop the kitchen team in a fast-paced, high-volume environment
  • Execute a menu inspired by the evolution of Mexico City cuisine
  • Maintain consistency, quality, and presentation across all dishes
  • Partner with Corporate Culinary on menu development and seasonal updates
  • Manage food cost, labor, inventory, and kitchen efficiency
  • Build strong systems for prep, ordering, and execution
  • Maintain high standards for cleanliness, organization, and food safety
  • Collaborate with the GM to ensure a seamless guest experience

What We’re Looking For

  • 5+ years in a kitchen leadership role (Executive Chef, CDC, or strong Sous Chef ready to step up)
  • Experience in high-volume, chef-driven restaurants
  • Strong understanding of food cost, labor, and kitchen systems
  • A balance of creativity and discipline
  • A hands-on leader who can develop and motivate a team
  • Passion for bold flavors, fresh ingredients, and thoughtful presentation

The pay range for this role is:

90,000 - 110,000 USD per year (Maleza Costa Mesa)
